Bishop wore several hats at Southern Utah University, including two stints as the Head Football Coach of the Thunderbird Football Team. When his career as head coach at SUU came to a close, he was the winningest coach in the history of the program with 80 victories.  Bishop also served as the athletic director at Southern Utah from 1991-2000, as well as the Director of Development and Alumni Relations.
